We have Amber Rich (Lighter Color with a rich taste) Dark Robust (Darker Color with a robust taste and Very Dark ( Very Dark with a strong taste) We use a meter to grade our syrup. It tells us if it is Amber, Dark or Very Dark. After opening Maple Syrup it should be refrigerated. You can also freeze your syrup to extend its shelf life for an indefinite time. Unopened maple syrup can last for an indefinite time when stored in your fridge.
